Trail mix cookies
Ingredients:
1/4 cup peanut butter
1/4 cup almond butter
1/2 cup butter
3/4 cup brown sugar
1 oz honey
2 eggs
1 1/2 tsp vanilla extract
1 1/2 cups whole wheat flour
1 tsp baking soda
3/4 tsp salt
1/2 cup flax seeds
2 cups rolled oats
1/4 cup currants
1/4 cup dried cherries, chopped
1/4 cup pumpkin seeds
1/3 cup walnuts, chopped
1/4 tsp pumpkin spice mix
Directions:
Preheat oven to 350°F. Mix in a stand mixer, with a hand mixer, or by hand the nut butters, butter, brown sugar, and honey until creamy. Next, mix in eggs and vanilla. Add flour, baking soda, salt, and pumpkin spice and mix. Add oats, and then the rest of your mix ins.
Scoop into balls (~2 tbsp each), and then flatten by hand on your silpat or parchment paper lined cookie sheet. Bake at 350°F for around 6-6.5 minutes, or until golden on the bottom of the cookie. Let rest and enjoy! Each batch makes ~32 cookies.
