Bike ride banana bread

Similar to my original banana bread recipe…but slightly lower fiber, lower fat, and higher carb; optimized to fuel you during a long bike ride!

Ingredients

1/3 cup all purpose flour

1 1/4 cup whole wheat flour

3 tbsp brown sugar

3 tbsp molasses

1 tsp baking powder

1 tsp baking soda

3/4 tsp pumpkin spice mix

1/3 tsp ground cardamom

1/4 ground nutmeg

4 very ripe bananas, mashed

1 tsp lemon zest

1/4 cup walnut oil

1/3 cup plain yogurt

4 oz applesauce

3/4 tsp salt

2 eggs

1 tsp vanilla extract

1 3/4 cups oats

Directions

Preheat oven to 350°F. Combine wet ingredients and dry ingredients in separate bowls. Mix wet ingredients into dry ingredients using a stand mixer, hand mixer, or a spoon and your muscles. Pour into a parchment paper or oil lined loaf pan. Bake at 350°F for 1 hour, or until a knife comes out clean when inserted. Let cool and enjoy!
